Salted Egg Yolk Prawns

Ingredients
  

  • 1 kg / 2 lb fresh prawns
  • 5 salted egg yolks
  • 50 g butter
  • 1/2 tablespoon chicken bouillon powder
  • 1/2 teaspoon sugar
  • Potato starch for coating
  • Cooking oil for frying

Method
 

  1. Steam the salted egg yolks on high heat for 15 minutes. Let cool, then mash until fine.
  2. Prepare the prawns: snip off legs, tail and rostrum. Wash and pat dry.
  3. Lightly coat each prawn in potato starch.
  4. Fry the prawns over medium heat for about 10 minutes, or until crispy.
  5. Melt the butter in a clean pan. Add the mashed salted egg yolk, sugar and chicken bouillon powder; cook for 3 minutes.
  6. Add the fried prawns and toss through the sauce until evenly coated.
  7. Serve immediately with lemon or spicy mayonnaise.
