Snake Beans with Tofu

Ingredients
  

  • 1¼ lb 500 g French beans
  • 7 oz 200 g silken tofu, cubed
  • 2 shallots thinly sliced
  • ~1 cup 200 ml coconut milk
  • 1 cup 115 g roasted, shelled peanuts, chopped
  • Juice of 1 lime
  • 2 tsp palm sugar
  • 4 tbsp soya sauce
  • 1 tsp dried chilli flakes

Method
 

  1. Thinly slice the beans diagonally. Blanch in boiling salted water for 30 seconds; drain, refresh under cold water and drain again. Transfer to a serving bowl.
  2. Combine the tofu, shallots and coconut milk in a pan and heat gently, stirring, until the tofu begins to crumble.
  3. Add the peanuts, lime juice, sugar, soya sauce and chilli flakes and cook, stirring, until the sugar dissolves.
  4. Pour the sauce over the beans, toss to mix and serve immediately.
