
Churros with Chocolate Dipping Sauce

Method
- Combine the water, sugar, salt and oil in a saucepan. Bring to a boil over medium heat.
- Remove from heat. Add the flour all at once and stir vigorously with a wooden spoon until the dough comes together into a smooth ball and pulls away from the sides of the pan.
- Transfer the dough to a piping bag fitted with a large star nozzle.
- Heat oil to 180°C in a deep pan. Pipe 15 cm lengths of dough directly into the oil, cutting with scissors. Fry in batches for 2–3 minutes per side until deep golden and crisp.
- Drain on paper towels, then immediately toss in the cinnamon sugar.
- For the chocolate sauce: heat the cream until just simmering. Pour over the chopped chocolate and butter. Stir until smooth. Add vanilla.
- Serve the churros hot with the warm chocolate sauce for dipping.
