
Green Curry (Gaeng Keow Wan)

Method
- Pound all paste ingredients together in a mortar and pestle (or blend) until a smooth paste is formed.
- Heat a wok over medium-high heat. Add half the coconut cream and bring to a vigorous simmer. Cook, stirring, until it reduces and splits (the oil separates from the cream) — about 5 minutes.
- Add 3 tbsp of the green curry paste and fry in the coconut cream oil for 2 minutes until fragrant.
- Add the chicken and cook, stirring, for 3 minutes.
- Pour in the remaining coconut cream and the coconut milk. Add the fish sauce and palm sugar.
- Add the eggplant and kaffir lime leaves. Simmer for 10–12 minutes until the chicken is cooked and the eggplant is tender.
- Taste and adjust seasoning with more fish sauce or sugar. Finish with Thai basil leaves. Serve with steamed jasmine rice.
