Khao Pad (Thai Fried Rice)

Ingredients
  

  • 4 cups cold cooked jasmine rice
  • 300 g prawns peeled or chicken (sliced)
  • 2 eggs
  • 4 cloves garlic minced
  • 1 medium onion diced
  • 3 spring onions sliced
  • 2 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tsp sugar
  • 1/4 tsp ground white pepper
  • 3 tbsp vegetable oil
  • Cucumber slices lime wedges and fresh coriander to serve

Method
 

  1. Heat a wok over very high heat until smoking. Add 2 tbsp oil.
  2. Stir-fry the garlic for 30 seconds. Add the onion and cook for 1 minute.
  3. Add the prawns or chicken and cook until just done. Push to the side.
  4. Add 1 tbsp oil to the empty side. Crack in the eggs and scramble until just set. Fold into the protein.
  5. Add the cold rice, breaking up any clumps. Stir-fry vigorously over high heat for 2–3 minutes.
  6. Season with fish sauce, oyster sauce, sugar and white pepper. Toss to combine.
  7. Add the spring onions and toss for 30 seconds. Remove from heat.
  8. Serve with cucumber, lime wedges and fresh coriander.
