Banh Mi (Vietnamese Baguette Sandwich)

Ingredients
  

Pickled Vegetables
  • 1 large carrot julienned
  • 200 g daikon radish julienned
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt
Pork Filling
  • 400 g pork tenderloin or belly thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 2 cloves garlic minced
  • 1 tsp five-spice powder
Assembly
  • 4 Vietnamese baguettes or 2 standard baguettes, cut in half
  • 4 tbsp mayonnaise or pâté
  • 1 tbsp Maggi seasoning or soy sauce
  • 1 cucumber thinly sliced lengthwise
  • Fresh coriander and mint leaves
  • 2 jalapeños sliced

Method
 

  1. Make the pickled vegetables: toss the carrot and daikon with the vinegar, sugar and salt. Set aside for at least 20 minutes.
  2. Marinate the pork: combine all pork marinade ingredients and mix with the pork. Marinate for 15 minutes.
  3. Grill or pan-fry the marinated pork over medium-high heat for 2–3 minutes per side until caramelised and cooked through. Set aside.
  4. Lightly toast the baguettes. Slice open lengthwise.
  5. Spread the cut sides with mayonnaise or pâté. Drizzle with a little Maggi seasoning.
  6. Fill with the cooked pork, pickled vegetables, cucumber, fresh coriander, mint and jalapeño slices.
  7. Press together and serve immediately.
