Com Tam (Broken Rice with Grilled Pork)

Ingredients
  

Grilled Pork Chops
  • 4 pork chops thin cut
  • 3 tbsp fish sauce
  • 2 tbsp sugar
  • 2 tbsp lemongrass finely minced
  • 2 cloves garlic minced
  • 1 shallot minced
  • 1 tsp five-spice powder
  • 1 tsp sesame oil
To Serve
  • 600 g cooked broken rice or jasmine rice
  • 2 eggs fried
  • 100 g pork meatloaf cha trung, optional
  • 100 g pickled vegetables daikon and carrot
  • Spring onion oil: 3 spring onions sliced + 3 tbsp heated vegetable oil
  • Nuoc cham dipping sauce

Method
 

  1. Combine all pork marinade ingredients. Coat the pork chops thoroughly and marinate for 20 minutes.
  2. Make spring onion oil: pour hot vegetable oil over sliced spring onions. Let sizzle and set aside.
  3. Grill the pork chops over high heat or under a hot broiler for 3–4 minutes per side until caramelised and cooked through.
  4. Serve the broken rice on a plate. Arrange the sliced grilled pork alongside.
  5. Add the fried egg, pickled vegetables and any other accompaniments. Drizzle spring onion oil generously over the rice.
  6. Serve with nuoc cham dipping sauce on the side.
