
Sinigang na Baboy (Pork Tamarind Soup)

Method
- Bring the water to a boil in a large pot. Add the pork, tomatoes and onion. Skim any foam.
- Reduce heat and simmer for 45–60 minutes until the pork is tender.
- Dissolve the tamarind paste in some of the broth and add to the pot (or add the sinigang mix).
- Add the daikon and long beans. Simmer for 8 minutes.
- Add the chillies and kangkong. Season with fish sauce and salt. Simmer for 2 more minutes.
- Taste — the soup should be pleasantly sour. Serve in deep bowls with steamed rice.
