Kafta Meshwi (Grilled Minced Lamb Skewers)

Ingredients
  

Kafta
  • 600 g minced lamb
  • 1 small onion very finely grated
  • 3 tbsp fresh flat-leaf parsley finely chopped
  • 1 tsp cumin
  • 1 tsp coriander
  • ½ tsp cinnamon
  • ½ tsp allspice
  • ¼ tsp cayenne pepper
  • Salt and black pepper
  • Metal or soaked wooden skewers
To Serve
  • Warm flatbreads
  • Sliced tomatoes and onion
  • Fresh parsley and sumac
  • Tahini sauce or yoghurt

Method
 

  1. Combine all kafta ingredients in a bowl. Mix and knead vigorously for 3–4 minutes until the mixture becomes sticky and well combined.
  2. Refrigerate for 15 minutes.
  3. Divide into 8 portions. With wet hands, mould each portion around a skewer into a long sausage shape, about 15 cm long. Squeeze firmly to ensure it holds.
  4. Grill over high heat (charcoal is traditional) for 3–4 minutes per side until nicely charred and cooked through.
  5. Serve immediately wrapped in warm flatbread with sliced tomato, onion, fresh parsley and a dusting of sumac. Drizzle tahini sauce over.
