Hummus

Ingredients
  

  • 400 g canned chickpeas drained (reserve the liquid)
  • 100 g tahini sesame paste
  • Juice of 2 lemons
  • 2 cloves garlic
  • ½ tsp salt
  • 3 tbsp ice-cold water
  • 4 tbsp extra virgin olive oil
  • Smoked paprika and fresh parsley to garnish

Method
 

  1. Place the drained chickpeas, tahini, lemon juice, garlic and salt into a food processor.
  2. Blend for 1 minute. Scrape down the sides.
  3. With the processor running, add the ice-cold water one tablespoon at a time. Blend for 4–5 minutes until the hummus is very smooth, light and creamy.
  4. Taste and adjust the lemon, garlic and salt.
  5. Spread onto a plate, creating a well in the centre with the back of a spoon. Drizzle olive oil into the well.
  6. Dust with smoked paprika and scatter fresh parsley over. Serve with warm pita bread.
