Bulgogi (Korean BBQ Beef)

Ingredients
  

Marinade
  • 600 g beef ribeye or sirloin very thinly sliced
  • 4 tbsp soy sauce
  • 2 tbsp sugar
  • 1 tbsp sesame oil
  • 3 cloves garlic minced
  • 1 tsp grated ginger
  • 2 spring onions finely sliced
  • ½ pear or apple grated (for tenderising)
  • 1 tbsp toasted sesame seeds
  • ½ tsp black pepper
To Serve
  • Steamed rice or lettuce wraps
  • Sliced spring onions and sesame seeds
  • Gochujang and ssamjang dipping sauces

Method
 

  1. Combine all marinade ingredients in a bowl. Add the beef and mix well to coat. Marinate for at least 30 minutes (or up to 4 hours in the refrigerator).
  2. Heat a large heavy pan or grill over very high heat until smoking.
  3. Cook the beef in batches (do not crowd the pan) for 1–2 minutes per side until nicely caramelised with slightly charred edges.
  4. Serve over steamed rice or with lettuce leaves for wrapping. Garnish with spring onions and sesame seeds. Serve with gochujang and ssamjang sauces on the side.
