Ingredients
  

  • 2 cups all-purpose flour plus more for dusting
  • 3 large eggs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 tablespoon water as needed

Method
 

  1. Mound the flour on a clean work surface and make a well in the center.
  2. Crack the eggs into the well, add the olive oil and salt, and beat lightly with a fork.
  3. Gradually incorporate the flour from the inner walls of the well until a shaggy dough forms.
  4. Knead the dough by hand for about 8-10 minutes until smooth and elastic. Add small amounts of water if the dough is too dry.
  5. Wrap the dough in plastic wrap and let it rest at room temperature for 30 minutes.
  6. Divide the dough into 4 portions. Using a rolling pin or pasta machine, roll each portion out thinly.
  7. Cut the dough into your desired pasta shape (fettuccine, tagliatelle, etc.).
  8. Bring a large pot of salted water to a boil. Cook the fresh pasta for 2-3 minutes until al dente.
  9. Drain and toss with your favorite sauce. Serve immediately.
