
Pozole Rojo (Red Pork and Hominy Soup)

Method
- Place the pork, garlic head, onion and stock in a large pot. Bring to a boil, skim any foam, then reduce heat and simmer for 1.5 hours until the pork is very tender.
- Remove the pork, shred it and set aside. Strain the broth and return to the pot.
- Blend the soaked chillies with garlic, oregano, cumin and some of the broth until smooth. Strain through a sieve.
- Heat a little oil in a pan, pour in the chile paste and fry for 3 minutes. Add to the strained broth.
- Add the hominy and shredded pork to the broth. Simmer for 30 minutes until everything is well integrated and the soup is deeply flavoured. Season with salt.
- Ladle into deep bowls and serve with all garnishes on the side for each person to customise.
