Som Tum (Green Papaya Salad)

Ingredients
  

  • 400 g green unripe papaya, peeled and julienned or grated
  • 2 cloves garlic
  • 2 –4 bird's eye chillies adjust to heat preference
  • 2 tbsp palm sugar or brown sugar
  • 3 tbsp fish sauce
  • 3 tbsp lime juice
  • 2 tbsp dried shrimp
  • 50 g roasted peanuts
  • 8 cherry tomatoes halved
  • 6 long beans or French beans cut into 3 cm pieces

Method
 

  1. Using a large mortar and pestle, pound the garlic and chillies into a rough paste.
  2. Add the palm sugar, fish sauce and lime juice. Pound to combine.
  3. Add the long beans and pound lightly to bruise.
  4. Add the green papaya and cherry tomatoes. Pound and toss to mix — use a spoon to help toss while pounding.
  5. Add the dried shrimp and mix through.
  6. Transfer to a serving plate. Top with roasted peanuts and serve.
  7. Note: if no mortar is available, mix all dressing ingredients together and toss with the remaining ingredients in a bowl, bruising the beans lightly by hand.
