
Sundubu Jjigae (Soft Tofu Stew)

Method
- Heat sesame oil in a clay pot or small heavy saucepan over medium-high heat.
- Add the mince and cook, breaking it up, until browned.
- Add the garlic and gochugaru. Stir-fry for 1 minute until fragrant.
- Pour in the stock. Bring to a boil.
- Add the clams or prawns and the soft tofu in large spoonfuls. Season with soy sauce and salt.
- Simmer for 5 minutes. Crack an egg directly into the stew — it will cook in the residual heat.
- Garnish with spring onion. Serve immediately in the clay pot with steamed rice.
