Ingredients
  

  • 2 cups whole wheat flour plus extra for dusting
  • 3/4 cup water or as needed to form dough
  • 1/2 tsp salt for dough
  • 2 tsp oil for dough
  • 3 boiled potatoes peeled and mashed
  • 1 green chilli finely chopped
  • 2 tbsp fresh coriander leaves finely chopped
  • 1 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1/2 tsp coriander powder
  • 1/2 tsp chaat masala
  • 1 tsp salt or to taste, for filling
  • 2 tbsp butter or ghee for cooking

Method
 

  1. In a large bowl, combine whole wheat flour, salt, and oil. Gradually add water and knead into a smooth, soft dough. Cover and rest for 15 minutes.
  2. In another bowl, combine the mashed boiled potatoes, chopped green chilli, coriander leaves, red chilli powder, turmeric powder, cumin powder, coriander powder, chaat masala, and salt. Mix well to form the filling.
  3. Divide the dough into equal portions. Roll one portion into a medium-sized circle on a lightly floured surface.
  4. Place a generous portion of the potato filling in the center of the rolled dough. Spread it evenly, leaving a border around the edges.
  5. Fold and seal the dough around the filling to enclose it completely, then gently roll it out again into a flat paratha shape.
  6. Using a knife or pastry cutter, make strategic cuts in the paratha and twist the strips to create a decorative twisted pattern.
  7. Heat a tawa or flat griddle over medium-high heat. Place the twisted paratha on the hot tawa and cook for 2-3 minutes until the underside starts to show golden spots.
  8. Flip the paratha, apply butter or ghee, and cook the other side for another 2-3 minutes until golden brown and cooked through. Repeat for remaining parathas.
  9. Serve hot with yogurt, pickle, or your favorite chutney.
