Kalan (Mango in Coconut-Yoghurt Curry)

Ingredients
  

Main Ingredients
  • 3 ripe mangoes 600 g
  • 1 1/2 cups water
  • 1 tsp turmeric powder
  • Salt to taste
  • 2 cups 100 g grated coconut
  • 1 tbsp chilli powder
  • 1 tsp cumin powder
  • 4 cups yoghurt
  • 2 tbsp sugar or to taste
  • 2 tsp fenugreek powder
For Tempering
  • 2 tbsp ghee
  • 1 tsp mustard seeds
  • 1 tsp fenugreek vendiyam seeds
  • 4 dried chillies cut to 1-inch pieces
  • 2 tsp uncooked rice
  • 3 stalks curry leaves leaves only

Equipment

  • Saucepan
  • Blender
  • Frying pan (for tempering)

Method
 

  1. Peel and cut the mango into large pieces.
  2. Combine the mango, 1 cup water, turmeric and salt. Bring to the boil and cook until the mango is soft.
  3. Grind together the coconut, chilli powder, cumin and remaining 1/2 cup water until finely ground. Add to the cooked fruit and cook until thick.
  4. Blend the yoghurt until smooth, then add to the mango mixture with the sugar. Do not let the mixture boil or the yoghurt will curdle.
  5. Once heated through, remove from heat, adjust seasoning and sprinkle with the fenugreek powder.
  6. For tempering: heat ghee and fry the mustard seeds, fenugreek seeds, dried chillies and uncooked rice until the seeds splutter. Stir in the curry leaves and remove from heat immediately.
  7. Pour the tempered ghee into the kalan and stir to mix.
