Parippu (Split Green Bean Curry)

A comforting Kerala-style lentil curry finished with a coconut-cumin paste and mustard seed tempering.

Ingredients
  

Main Ingredients
  • 2 cups 200 g split green beans
  • 3 cups water
  • 1 tsp turmeric powder
  • Salt to taste
  • 2 cups 100 g grated coconut
  • 2 cloves garlic peeled
  • 1 tsp cumin powder
For Tempering
  • 2 tbsp ghee or vegetable oil
  • 1 tsp mustard seeds
  • 3 dried chillies cut to 1-inch pieces
  • 2 stalks curry leaves leaves only
  • 4 small onions finely sliced

Equipment

  • Saucepan
  • Frying pan (for tempering)

Method
 

  1. Rinse the split green beans and drain well.
  2. Combine the green beans, water, turmeric powder and salt in a pan. Bring to the boil and cook until the beans are soft and can be mashed.
  3. Grind together the grated coconut, garlic and cumin until quite smooth.
  4. Mash the cooked beans lightly. Add the ground coconut mixture and cook for 5 minutes until the curry is thick. Adjust salt and remove from heat.
  5. For tempering: heat ghee in a separate pan. Add mustard seeds and dried chilli and fry until the mustard seeds burst. Add curry leaves and onion and fry until golden brown.
  6. Pour the tempered oil into the parippu and stir to mix.
