
Salted Egg Yolk Prawns
Crispy fried prawns tossed in a rich, savoury salted egg yolk butter sauce.

Method
- Steam the salted egg yolks on high heat for 15 minutes. Let cool, then mash until fine.
- Prepare the prawns: snip off legs, tail and rostrum. Wash and pat dry.
- Lightly coat each prawn in potato starch.
- Fry the prawns over medium heat for about 10 minutes, or until crispy.
- Melt the butter in a clean pan. Add the mashed salted egg yolk, sugar and chicken bouillon powder; cook for 3 minutes.
- Add the fried prawns and toss through the sauce until evenly coated.
- Serve immediately with lemon or spicy mayonnaise.
