Vazhakka Mezukuperatti (Stir-Fried Unripe Plantain)

Ingredients
  

  • 3 unripe plantains
  • 1 tsp turmeric powder
  • Salt to taste
  • 1/2 to 1 cup water
  • 2 tbsp vegetable oil
  • 2 cloves garlic roughly pounded
  • 1 tsp chilli powder

Method
 

  1. Peel the plantain, then cut into 4 cm (1 1/2-inch) cubes.
  2. Combine the plantain, water, turmeric powder and salt in a large pan. Bring to the boil and cook for 5 minutes until the plantain is just beginning to soften. Drain any excess liquid and set aside.
  3. Heat the oil in a pan over low heat. Add the plantain, garlic and chilli powder and cook, stirring frequently, until the plantain is cooked through and lightly browned.
