Spaghetti Bolognese (or Spaghetti with Meatballs)

Ingredients
  

  • 2 tbsp olive oil
  • 1 onion finely chopped
  • 1 clove garlic crushed
  • 1 tsp dried mixed herbs
  • ¼ tsp cayenne pepper
  • ¾ –1 lb 350–450 g minced chicken
  • 2 cups pasta sauce
  • 1 tsp Worcestershire sauce
  • 1 tsp dried oregano
  • Salt and black pepper
  • ½ cup chicken stock or water
  • 14 oz–1 lb 400–450 g spaghetti
  • Chopped Italian parsley and grated Parmesan to serve

Method
 

  1. Heat the oil in a pan over low heat and sauté the onion and garlic until softened. Stir in the mixed herbs and cayenne and cook for 2–3 minutes.
  2. Add the minced chicken and cook gently for 5 minutes, stirring frequently to break up lumps.
  3. Stir in the pasta sauce, Worcestershire sauce, oregano, salt and pepper. Stir in the chicken stock and bring to the boil.
  4. Cover, reduce heat and simmer for 30 minutes. Cook the spaghetti in boiling salted water until just tender, drain.
  5. Divide the spaghetti into bowls. Spoon the sauce over, sprinkle with grated Parmesan and parsley and serve immediately.
